Denver is a city that has been a rising tide for local farmers, brewers, artists, hoteliers, restaurants and recreation enthusiast, and many a modern U.S. city has modeled their renaissance after the Mile High City, which makes it a highly sought after Western destination. There is no shortage of opportunities for romance, fun, food and culture in this dynamic city! Denver is a rare American metropolis that offers that fun and fancy of a big city, all while being the gateway to the Rocky Mountains, the plethora of nature and all its recreational benefits offered therein. This is ‘old west’ city that will invite you in with deep and sincere hospitality and will leave you pondering the simple yet profound question “why is it that we don’t live here?”

Where to Stay

The Ramble
The Ramble is one of Denver’s newest hotels, and the only one in the Rino (“River North”) District.  This neighborhood is cool, authentic and boasts breweries, wine bars, shopping, a food hall, and restaurants galore.  The hotel is immaculately designed…a true feast for the eyes.  Deep blue wood-paneled walls, antique chandeliers, vintage herringbone wood floors all set the scene for an away-from-home abode that feels both decadent and approachable.  The staff are incomparably kind and attentive, and are down-to-the-detail oriented to make your stay not only memorable, but one that you would want to return to again and again. (Both Whiskey and I would choose to stay at this lovely hotel every trip to the Mile High City!) View on Google.

This swanky hotel situated within the bustling downtown Union Station takes hip and relevant to a new standard. Inside of the station you will be pleasantly surprised to find multiple restaurants, bars, and a well-appointed bookstore, as well as this luxury hotel…this is indeed a one-stop shop destination.  No need to rent a car, as all that Denver has to offer can be found either in the station itself, or a just a short walk away.  The rooms are spacious and fitted with luxurious amenities, as well as large bathrooms, most with a shower and a soaking tub! Be sure to grab a bite and drinks at one of the many station restaurants and bars! View on Google.

ultreia
This is THE place to get your tapas game on in the downtown area of Denver.  Located inside the Union Station building, this Spanish inspired restaurant is a perfect cozy date-night locale.  Set in a low-lit, beautifully appointed, mural-lined split-level room of the train station, this is the place to experience Spanish tapas and Porteguese petiscos, and off-the-chart delicious varieties of Spanish gin and tonics.  (Whiskey and I sampled several gin and tonic creations and left very happy people!) View on Google.

stoic and genuine
Whiskey and I walked into this lovely little seafood spot at happy hour, and were blown away to find $2 dollar oysters that were fresh and delicious, sourced from both East and West coasts, and were paired beautifully with a glass of crisp white wine.  The food coming out of this tiny kitchen is on par with any fine dining restaurant, but set in a fun and relaxed environment that begets comfort and ease.  This is a perfect Friday night date night experience…from the excellent main dishes, to the crudo and raw seafood bar, you will leave satiated and elevated in heart and body! (I ordered the steak dish and was blown away by the flavor, perfectly executed temperature and complex, yet simple flavor. Homies ain’t playin’ at Ultreia!) View on Google.
